One of my favorite ideas from the 4-hour body was to create a food diary to keep yourself accountable about what you eat. Here is mine.

4 eggs

4 egg-equivalent portions of egg white (1/4 cup)

1 cup black beans (rinsed)

Veggies - I used sun-dried tomatoes, rapini, and spinach - you’ll use more than you think

Salt and Pepper

Grease muffin tin and preheat oven to 350

Beat eggs, egg whites, salt, and pepper together in a large bowl, add black beans and stir.

Saute veggies for a few minutes in butter or safflower oil. Distribute veggies among muffin cups. Top with egg/bean mixture.

Bake for 20-25 minutes (high altitude - 30-35 minutes). Frittatas should be slightly brown on top.

This recipe is better doubled, because you can store extras in the fridge and zap them in the mornings, and you can use a whole can of black beans.
